With summer looming, just like everyone I’m on a quest to work out more and eat a little healthier. I tend to get really bored with salads, so I’ve been trying out new recipes packed with flavour and excitement. This mango quinoa salad with delicious marinated chicken is my new favourite – easy and quick to make, colourful and healthy on top of everything. I can’t have enough of it!
Mango Chicken Quinoa Salad
For 2 servings:
1 chicken breast
1 tsp mild curry powder
1 tsp paprika
Juice of half a lemon
2 tbsp of mango chutney
1 cup uncooked quinoa
2 cup chopped cucumber
2 cup cubed mango
Coriander and Mint leaves to garnish
1. Cook the quinoa (follow the instructions on the packet), meanwhile slice the chicken into small chunks and leave to marinade in the mixture of paprika, curry powder, mango chutney and lemon juice.
2. After leaving to marinade for a couple of minutes, cook the chicken in the pan for 5 minutes, then add 100ml of water (and if wanted, a little more mango chutney) and leave to simmer for 2-3 minutes.
3. In a serving bowl, add the cucumber, mango, quinoa and cooked chicken and give it a little toss. Add a couple of mint and coriander leaves to garnish, and you’re done!
