Avocado and pancakes might not be the obvious partnership, but they actually work great together. Smashed, sliced, diced or even inside of a pancake: it just works.
The avocado is really a green super wonder packed full of nutritional goodness: fat (the good kind), protein, vitamins and minerals. It’s fatty, yes, but in moderation it’s fantastic for you. For this recipe, we’re using egg whites, soy protein powder and almond milk, so not only is it packed full of protein, it’s dairy and gluten free! These are great for brunch with a fried egg and ham or just with tomatoes and slices of avocado for a healthy lunch. Don’t be alarmed by the green colour, they might look like Shrek but taste absolutely delicious!

GLUTEN FREE AVOCADO PROTEIN PANCAKES
INGREDIENTS (makes 4 pancakes)
1/2 small avocado
5 tbsp almond milk (or any other milk)
2 egg whites
2 tbsp soy protein powder
salt & pepper to flavour
1// Mush the avocado and milk together until you get a smooth paste, whisk in the egg whites and finally add the protein powder, salt and pepper and whisk vigorously until you get a fluffy batter.
2 // Heat the pan on medium and add a little grease (butter/oil), then pour the batter in the pan. After a few minutes, the bottom should be lovely and golden and ready to flip – always keep an eye out though, as cooking times can vary. Cook a few minutes on the other side, and you’re done!
