Recipe: Crunchy Chili Chickpeas
All hail the miracle that is the chickpea. From creamy hummus to crunchy falafels – it’s one of the most versatile ingredients and we all have it right there in our kitchen cupboard. Oh, and did we mention they’re good for you? They’re full of fibre, a ton of protein and are packed with iron and vitamins to keep you going.
We experiment with chickpeas all the time and try to find new ways preparing them, which is how we stumbled upon this crispy chickpea recipe. Not only is it super easy, but it’s also made completely from ingredients you already have in your kitchen cupboard. So if you ever have an unexpected guest pop round, you can just whip these up in a jiffy like you’re Martha Stewart and you’ll leave them mighty impressed with your kitchen goddess skills.
CRUNCHY CHILI CHICKPEAS
1 can of chickpeas
1 teaspoon of olive oil
1/2 teaspoon of paprika
1/2 teaspoon sea salt
1/2 teaspoon chili powder
1/2 teaspoon garlic salt
1// Drain a can chickpeas and rinse well. Dry the chickpeas between two folded paper towels and rub softly back and forth until most of the skin has come off
2// Add the seasoning, olive oil and chickpeas to a closeable bag and shake it like Beyoncé shakes her booty, until they’re all covered.
3// Place on a tray covered with a baking sheet in a preheated oven at 150 degrees for about 30/40 minutes. Shake the tray a couple of times so all sides get crunchy. When ready, the chickpeas should be golden and crunchy. Easy peasy.
They’re great on their own as a snack but also great to add to salad or as a side with your meal. Play around with different spices to create different flavours – make them spicy or even sweet by adding different ingredients!
