Recipe: Summer Ceviche

The weather might have been horrendous in the past few days but that doesn’t mean that we have lost all hopes for summer. We’ve decided to brighten up our plates with a fresh and zingy cod ceviche!

Ceviche is the perfect summer dish, it’s fresh and full of flavours. And super quick to prepare! The ideal dish to make you forget about rainy England and take you away to sunny Spain… All in one mouthful!

It’s also the kind of recipe that we love here at Fashercise because you can make it your own by using different fish, vegetables or spices, it is never boring!

Summer Ceviche


Serves 4


2 fillets of white fish (we used cod which was delicious but you can also use sea bass or lemon sole)
2 avocados
4 tomatoes
4 spring onions, finely chopped
The juice of 3 limes
1 tbsp of olive oil
Red chilli de-seeded and chopped finely
Coriander coarsely chopped
Salt and pepper to taste

1// Chop the tomatoes and avocado into 1cm cubes, mix in a boil with the spring onions, olive oil, salt, pepper, half of the chili (make it as spicy as you’d like) and half of the coriander and a squeeze of lime juice. set aside.

2// Chop the fish in 2cm cube (you don’t want it to small so that it keeps its consistency). Add the remaining lime juice, chili and coriander and salt and pepper to taste. Set aside for a few minutes, the fish will start to ‘cook’ in the lime juice (it will become more opaque). Don’t leave it too long to avoid making it chewy.

3// Plate up the ceviche by layering the avocado and tomato mix with the fish. Add some chopped coriander and chili to decorate.

4// Serve to very impressed guests who will never guess it was that easy to make!

This recipe is perfect as a starter or as a light lunch! Feel free to experiment by adding peppers or even mango and switching up the herbs, why not basil or mint?
