Everyone should have a signature breakfast in their arsenal. A breakfast for all occasions – the post-workout treat, the hangover cure, the looks-far-more-impressive-than-it-really-is,the I-always-have-the-ingredients-in-the-fridge kind of brekkie. Well for me, that’s avocado and eggs on toast.
I always have an avocado and eggs in the fridge, and somehow the combination of these ingredients makes me happier than anything else. On top of that, it’s not even unhealthy – we’ve got protein from the eggs and dietary fiber, vitamins, and minerals from the avocado. As comfort food goes, this isn’t bad at all.
This is perhaps not a recipe as such – toast, avocado, egg – it’s not that hard to make, but I just wanted to share my ultimate power-breakfast with you. What’s yours?
1/2 Ripe avocado
1 egg Wholemeal toast (I used Warburton Sandwich Thins on this occasion and it worked great!)
Tomato/Pepper/Spring Onion to make a little salsa on the side
A few coriander stalks
Salt & Pepper to taste
1// Fry or poach an egg to your liking. Spread the avocado on the toast and put the egg on top. Garnish with coriander and your fresh salsa on the side. There’s nothing else to it, but a winning breakfast every single time…
